Now February has arrived, after what felt like nine or 10 weeks' worth of January, but last month's snow remains thick on the ground and as hard as concrete. FAIRMONT SANDWICHES
Cut white bread in one-fourth inch slices and spread two of the slices sparingly on both sides with butter worked until creamy; spread remaining two slices on but one side. Put between slices layers of finely chopped red or green peppers (wrung in cheese-cloth to remove all possible moisture) moistened with Mayonnaise dressing. There should be two layers of green peppers and one of red, or just the reverse. Repeat until a sufficient quantity are prepared. Fold in cheese-cloth and press under a light weight. Cut in one-fourth inch slices and arrange overlapping one another, in two or three rows, on a plate covered with a doiley.
